Roasted chicken

Method

  1. Mix the marinade ingredients (chilli powder, turmeric, ground coriander, ground cumin, garam masala and ground cinnamon, lemon juice, ginger garlic paste, yogurt and few drops of food color) with ¾ tsp salt and 1 tsp black pepper. Slash the legs of the chicken a few times, then rub the marinade all over. It tastes good if you can marinate in the fridge for a day 24 hours.
    TIP: Soak the chicken for few hours in salt water for even better taste before marination

  2. Pre heat oven to 450°F or 230°C. Roast the chicken for 45min to 1hr or until the juices run clear when tested with a skewer.

  3. When the chicken is done, remove the chicken legs from the oven and garnish with coriander — serve it will sliced onions and a slice of lemon.
